A platform dedicated to the history and evolution of Mexican Bread, known as “Pan Dulce,” and its authentic recipes. Founded by Alissandro “Alex” Peña, a Master Baker, trained culinary chef, and professional bread scientist, the platform shares his passion for artisan baking. Chef Peña's journey began in his family’s bakery and evolved through his professional experience in research and development. In 2020, he converted his pan dulce recipes into a comprehensive cookbook, The Mexican Bakery, which showcases the art, history, and evolution of Mexican pan dulce in North America.
